Μουσακάς and SEAcily!!!

Forse è arrivato il momento che io posti qualcosa che non sia un dolce, magari anche un piatto unico, che stia bene in queste giornate in cui pare (ribadisco pare) sia forse (forse) arrivata l’estate…. Ma non siamo così sicuri, certo è che ancora le alte temperature estive raggiunte al Nord della nostra penisola qui non sono arrivate.. non mi sembra possibile che IO a fine maggio non sia ancora andata al mare ad abbronzarmi ed ancora di più a fare un bagno nel nostro splendido mare. Sono una persona che quando si va al mare deve viverselo tutto, con l’età la voglia di passare più tempo in acqua che sul lettino per abbronzarmi non mi è ancora passata. Direi anzi  che quando sono al mare e ci sono le onde altissime… non riescono a farmi uscire dall’acqua, adoro giocare tra le onde, tuffarmi, saltare..peggio di un bambino..ah poi sia chiaro…se mi trovo su una spiaggia di sabbia solitamente faccio i capricci, perché non trovo mai nessuno disposto a costruire un castello …. Insomma tutto questo per dirvi che di solito torno dal mare felice, ma stanca, spesso tornando a casa si prende una buona granita con la brioche, ma non vi nego che poi a cena trovassi il piatto della ricetta che la mia amica Nadia Ambrogio al raduno di Bordighera della Cucina Italiana ci ha regalato quasi due anni fa,…… sarei tanto, ma tanto più felice!!
Un’ultima cosa, sappiate che l’ho preparata  per una serata a tema greco a casa dei soliti carissimi amici appena tornati dalla Pasqua in Grecia e hanno decretato che questa Moussakà è ancora più buona di quella mangiata da loro praticamente ogni giorno durante il loro viaggio.
Quindi a questo punto la ricetta ce l’abbiamo, le isole stupende, il mare splendido e gli antichi meravigliosi templi Greci pure….. venite in Sicilia…  , non parliamo greco (se non forse qualcuno quello antico) e si parla anche italiano..ahahahhah, baci a tutti Flavia
     





                                         

















MOUSSAKA’ di NADIA AMBROGIO (grazieeeeeeeeeeee)


Ingredienti:
1 e 1/2 kg melanzane tonde 1 kg patate
Per il sugo:
600 g carne macinata mista maiale e manzo (la ricetta prevede la carne di agnello che non tutti
gradiscono)
1 cipolla
1 spicchio d’aglio
2 carotine
1 ciuffo di prezzemolo
1 lt di passata di pomodoro MUTTI
,olio evo, sale pepe e cannella,vino bianco
Per la besciamella :
1 lt di latte
120 gr di farina
100 gr burro
2 uova
noce moscata
100 g di parmigiano

Preparazione :
Ragù
Preparare un soffritto con i sapori e olio, quando sarà appassito unire la carne macinata e fare rosolare, sfumare con mezzo bicchiere di vino bianco e quando è evaporato, unire la passata di pomodoro, mezzo cucchiaio raso di cannella e fare cuocere lentamente fino a quando il ragù sarà ben ristretto. Ci vorranno almeno tre ore.
Tagliare le melanzane a fette di circa due millimetri, metterle in uno scolapasta cospargendole di sale a fare l’acqua (io in realtà le metto in acqua salata per almeno un’ora e poi le asciugo bene, quindi il passaggio successivo di sciacquarle sotto l’acqua lo salto) ). Sciacquarle sotto l’acqua asciugarle bene e friggerle in abbondante olio. Tamponare con carta da cucina per eliminare l’eccesso di unto.
Sbucciare le patate e affettarle tutte di uguale spessore, circa due o tre millimetri, sbollentarle in acqua salata per due minuti. Asciugarle bene quindi friggerle in abbondante olio.
Preparare una besciamella densa: fare tostare la farina nel burro sciolto, unire il latte freddo in un colpo solo, sale pepe e noce moscata. Cuocere continuando a mescolare fino all’ebollizione. Quando sarà tiepida unire due rossi d’uovo mescolando con una frusta.
In una teglia leggermente unta(io in realtà non l’ho unta), disporre sul fondo le fette di patate, salare, proseguire con le fette di melanzana, il ragù preparato ed infine uno spesso strato di besciamella. Spolverare con il formaggio ed infornare 180°C per circa 40 minuti.

Una piccola premessa, ovviamente il ragù lo si può preparare con largo anticipo e congelare, e anche le melanzane le si può friggere la sera prima, così avranno modo di essere asciugate bene dall’olio e praticamente in questo modo avrete già dimezzato i tempi di preparazione.

Maybe it's time I post something that is not a cake, maybe even a single dish, which is good in these days that it seems and maybe (maybe) ... summer's here. But we’re not so sure, here in Sicily we haven’t still had the summer temperatures reached in the North of our country. I cannot believe that at the end of May I have not yet gone to the beach to tan and even more for a swim in our beautiful sea. I am a person that when you go to sea must enjoy it . when  I go to the seaside and the waves are high ... nobody is  able to get me out of the water, I love playing in the waves, dive, jump .. ah .. I’m worse than a child then it is clear ... if I am on a sandy beach usually do a tantrum, because I never find anyone willing to build a castle with me!! .... I mean all this to tell you that usually I come home from sea happy but tired, often returning home, we often stop  a good fresh yummy “granita” with brioche, but I would also appreciate the dish dinner recipe that my friend Nadia  gave us almost two years ago at Cucina Italiana meeting in Bordighera ... ... I would be much, but much happier!
One last thing, I prepared this recipe for a greek theme dinner at  the usual dear friends’ home  that  were just returned from Easter holiday in Greece and they have decreed that this Moussaka is even better than the ones they have eaten practically every day during their travel.
So , now,  we have a very good recipe, beautiful Sicilian islands, the wonderful sea and gorgeous ancient Greek temples as well ... .. ... come to Sicily, but  we do not speak greek … ahahahhah, kisses to all Flavia


 1 kg round eggplants

For the sauce:
600 g minced meat mixed pork and beef (the recipe calls for lamb that not all like)
1 onion
1 clove garlic
2 carrots
1 bunch of parsley
1 liter of tomato sauce MUTTI,
extra virgin olive oil, salt, pepper and cinnamon,
½ glass white wine
 
For bechamel:
1 liter milk
120 g flour
100 g butter
2 eggs
nutmeg
100 g Parmigiano Reggiano

Preparation:
 For the Sauce
Sauté with the flavors and oil, when it is wilted add the ground meat and fry gently, sprinkle with half a glass of white wine and when it is evaporated, add the tomato sauce, half a spoonful of cinnamon and cook slowly until the sauce is well reduced. It will take at least three hours.
Cut the eggplant into slices about two millimeters, put them in a colander sprinkle with salt to make water (I actually put them in salted water for at least an hour and then dried them thoroughly, then I jump  the next step of rinsing under water ). Rinse under water, dry them well and fry in hot oil. Dab with paper towel to remove excess grease.
Peel potatoes and slice them all of equal thickness, about two or three millimeters, soak them in salted water for two minutes. Wipe dry and then fry in hot oil.
Prepare a thick white béchamel sauce:  toast the flour into melted butter, add the cold milk all at once, salt, pepper and nutmeg. Cook stirring constantly until boiling.
When it is warm add two egg yolks, stirring with a whisk.
In a lightly oiled baking pan (I actually have not greased), place the potato slices on the bottom, add salt and continue with the slices of eggplant, meat sauce prepared and then a thick layer of béchamel sauce. Sprinkle with cheese and bake at 350°F for about 40 minutes.

A little tip: the tomato sauce can be prepared well in advance and freeze, and even the eggplant can be fried the night before, so will be able to be wiped from the oil well and just so you will have already halved the time preparation.

1-2-3 ...CROSTATA DI FRAGOLE E CREMA!!! 1-2-3 STRAWBERRY TART

Con il guscio “in bianco” di pasta frolla 3-2-1 di Ale che vi ho postato ieri questa volta ho fatto un classico delle crostate alla frutta: la crostata alle fragole, con la crema pasticciera ..l’unico accorgimento è stato quello di spalmare sul fondo un velo confettura di fragole in modo da lasciare la frolla più croccante. A volte ci metto del cioccolato fuso, ma stavolta non potevo perché uno dei miei ospiti al momento non può mangiare tantissime cose tra cui cioccolato e lievitati..quindi questa crostata ci stava  bene!
                                           
Oggi o al massimo domani la mia amica Alessandra di mamma papera decreterà i vincitori del suo “velocissimo” contest, di cui sono stata una delle “giudicesse” insieme a Eleonora, Simona e Cranberry…e ringrazio tutte in particolare chi mi ha dato questa bella opportunità di collaborazione. Ricette veloci da preparare in massimo 20 minuti…sicuramente ne verrà fuori una raccolta utilissima per tutti, quindi ricordatevi di passare da lei!!! Ah…dimenticavo…in bocca al lupo alle finaliste!!!


CROSTATA  DI FRAGOLE E CREMA

1 guscio cotto in bianco di pasta frolla 3-2-1
3-5 cucchiai di confettura di fragole
Zucchero a velo per decorare
Fragole fresche per decorare

CREMA PASTICCIERA
1 uovo
2 tuorli
500 gr latte
100 gr zucchero
50 gr farina
Scorza grattugiata di un limone

Mescolate lo zucchero con la buccia grattugiata del limone, aggiungete  le uova, la farina ed aggiungete il latte lentamente sempre mescolando ed amalgamando bene il tutto . Mettete sul fuoco e mescolate per almeno 10 minuti, fino a quando la crema raggiunge la giusta consistenza.

Prendete il guscio della frolla cotta “in bianco”, spalmateci la marmellata, versateci sopra la crema  pasticcera , precedentemente fatta raffreddare. Decorate con le fragole e una spolverata di zucchero a velo.

STRAWBERRIES AND CREAM TART

1 cooked  pastry 3-2-1
3-5 tablespoons strawberry jam
Icing sugar to decorate
Fresh strawberries for garnish

CUSTARD
1 egg
2 egg yolks
500 g milk 100 g sugar
50 g flour
Grated rind of one lemon

Mix  sugar and grated lemon peel, add the eggs, flour and add milk slowly, stirring constantly, and mix well. Put on the heat and stir for 10 minutes, until the cream reaches the right consistency.


Take the cooked pastry “shell” , spread the marmalade, pour over the cream (cooled previously). Decorate with fresh strawberries and a “dusting” of icing sugar.

LA PASTA FROLLA 3-2-1 !!! "3-2-1" PASTRY!!

Credo che dopo tutto il verde delle ultime due ricette postate non ci stia male un altro colore e soprattutto che faccia da base ad un bel dolcino!!
Questa è la ricetta che uso solitamente per la pasta frolla è la 3-2-1-di Ale  e visto il risultato non la mollo più!!!  Domani vi dirò questa per cosa l’ho utilizzata in questi giorni, ma in realtà è la base di molti dolci  che ho fatto e che faccio, dalla classica crostata con la marmellata ad altre meraviglie.
Oggi sono breve e veloce perché è mia intenzione venirvi a trovare….. baci , Flavia
PASTA FROLLA 3-2-1 (di Ale)

300 gr farina 00
200 gr burro freddo di frigo a cubetti
100 gr zucchero semolato
1 uovo
Buccia grattugiata di 1 limone

Mescolare velocemente il burro con lo zucchero, poi a seguire la farina, la buccia grattugiata di limone e l’uovo.  Formare una palla e mettere a riposare in frigo per una mezz’oretta almeno!!

Io in realtà ho preso l’impasto sufficiente a rivestire una teglia con il fondo amovibile e ho steso la pasta frolla, e ho messo a riposare in frigo.
Dopo un’oretta ho ricoperto la frolla con dei ceci ed infornato a 180°C per circa 20 minuti, il tempo che si cuocesse. Ho eliminato i ceci (presto mi fornirò delle palline di ceramica apposta per questi impasti da infornare)e lasciato raffreddare il guscio di pasta frolla.

SHORT PASTRY 3-2-1 (Ale)
300 g flour 00
200 g of cold butter into cubes
100 g caster sugar
1 egg
Grated rind of 1 lemon

Mix the butter with the sugar quickly, then follow the flour, lemon zest and egg. Form a ball and put it in the refrigerator for at least half an hour!

I actually I got the dough enough to coat a baking pan with removable bottom and I spread the pastry, and I put it in the refrigerator.
After an hour I covered the cake with the chickpeas and baked at 350°F for about 20 minutes. I deleted the chickpeas (as soon as possible I’m going to buy ceramic balls for this) and cool the pastry shell.

RISI ''IN'' BISI - RICE ''IN'' PEAS

Stamattina mi è preso un colpo quando ho cominciato a girare per blog e non riuscivo a commentare….. è stato un delirio, poi ho saputo che è un problema che hanno avuto altri bloggers, e ora che devo posatre la mia versione di Risi e Bisi per l’MTC di maggio sono un po’ in ansia all’idea che possa scomparire tutto!!! Incrocio le dita e ovviamente salvo il documento fino al prossimo post!! :D 
Ovviamente ho già visto in giro le belle idee postate dagli altri partecipanti al contest mensile di Ale e Dani e ho cercato di non farmi influenzare e soprattutto di non deprimermi all’idea che anche questo mese posterò una ricetta banalina, ma va bene, dicevo prima che in realtà , e per me è così, il bello di partecipare ad un contest è il mettersi alla prova con qualcosa che o non avremmo mai provato a fare o non avremmo fatto nessuno sforzo a proporla in maniera diversa.
La vincitrice dell’MTC di Aprile ,Annamaria , ha proposto la ricetta di Risi e Bisi (riso e piselli) una ricetta che anche a casa mia si è sempre chiamata così grazie al mio papà veneziano, e la mia ricetta non si discosta molto dalla ricetta di Annamaria, però stavolta ho leggermente cambiato il nome, perché l’ho presentata un po’ in versione fingerfood…e che dire sono rimasta soddisfatta della sottoscritta!!
Con questa ricetta partecipo all’MTC di maggio

E poiché la preparazione può anche essere fatta in due tempi la propongo anche per il contest di Lory


RISI IN BISI

150 gr riso Carnaroli
50 gr pancetta dolce a cubetti
250 gr pisellini freschi
1 cucchiaino olio EVO
2 cucchiaini di burro
½ cipolla piccola tagliata finemente
1 tazze di brodo vegetale
1 tuorlo
1 cucchiaio di Parmigiano Reggiano
Sale
Pepe 

In una casseruola mettere l’olio e un cucchiaino di burro e fare rosolare la cipolla 3-4 minuti, aggiungere la pancetta e dopo 3-4 minuti aggiungere 150 gr di pisellini e farli cuocere, aggiungere il sale e il pepe, dopo 10 minuti versare il riso e farlo tostare mescolando un paio di minuti, aggiungere di tanto in tanto il brodo mano che mano che il riso si asciuga. Aggiungere l’altro cucchiaio di burro e mantecare.Aggiustare di sale . Spegnere e fare raffreddare.

Nel frattempo sbollentare i 100 gr di pisellini rimasti, scolarli salarli, aggiungere il parmigiano e il tuorlo d’uovo e frullare tutto con il mixer.

Formare delle palline con il risotto e passarle nella crema di pisellini, appoggiarli in una pirofila ed infornare a 220°C per 10 minuti. Servire tiepidi o caldi.  Buon appettito!!

This morning I had a hit when I started to turn and could not comment on your blogs ... ..it  was a delusion, then I knew that was a problem that other bloggers have had, and now I have my version to post  Risi e Bisi(rice and peas) for the  May MTC. I was a bit 'anxious about the idea that everything will disappearas two weeks ago! I cross my fingers and of course save the document till the next post! : D
Obviously I've seen around the great ideas posted by other participants in the monthly contest of  Ale and Dani and I tried not to influence and above all not to at the idea that this month I post another banal recipe , but that's okay, I think that, and for me it’s so, the beauty to join a contest is to test with a new recipe that we would not have ever tried to do or we would not have made it in different ways.
The winner of April dell'MTC, Annamaria, chose the recipe for Risi e Bisi (rice and peas) that even in my house it is always called so, thanks to my dad from Venice, and my recipe does not differ much from Anamaria’s recipe, but this time I slightly changed the name because I presented as finger food ... and I say that I was satisfied with myself!





And because the preparation can also be done in two stages I  also join to Lory’s contest



RISI IN BISI  (rice IN peas)

150 gr Carnaroli Rice
50 g fresh diced bacon
250 g fresh peas
1 teaspoon oil EVO
2 teaspoons butter
½ small onion finely chopped
1 cup vegetable broth
1 yolk
1 tablespoon Parmigiano Reggiano
Salt
Pepper

In a saucepan, put oil and a teaspoon of butter, then sauté onion 3-4 minutes, add the bacon and after 3-4 minutes add 150 grams of peas and cook, add salt and pepper, after 10 minutes add the rice and toast, stirring a couple of minutes, add the broth from time to time when the rice dries out. Season with salt. One minute before turn off add the other Tbsp butter and mix. After 13 minutes turn off and allow to cool.

Meanwhile, blanch the remaining 100 grams of peas, drain, add salt, add the Parmesan and the egg yolk and mix everything with the mixer.
Form small balls with the rice and pass them in the cream of peas, put them in a baking dish and bake at 425°F for  ten minutes. Serve warm and enjoy!!!

POMODORI VERDI FRITTI - FRIED GREEN TOMATOES

C’è una parte degli USA che non è grandi Parchi Nazionali, non è lunghe ed infinite autostrade a 6 corsie, non è grattacieli senza fine…. C’è una parte degli USA sonnacchiosa, senza rumore, a misura d’uomo, romantica, dolce e calda…. Si trova nel Sud, sulla Costa Atlantica dove sfociano grandi fiumi tuttora vie commerciali di enormi navi cargo..nell’800 erano zone ricche e fiorenti, piantagioni di tabacco e cotone…commercio di schiavi , poi la schiavitù fu abolita (per fortuna) e queste zone del Sud subirono un grande crollo insieme ad ingenti danni dovuti alla guerra di secessione. Non ci crederete , ma paradossalmente questa guerra persa, oggi è stata una fortuna per città come Savannah (Georgia) e Charleston (South Carolina) e volete sapere perché??? Perché a differenza di tutte le altre città Americane, si sono fermate, non c’erano i soldi per ricostruire ..e così sono rimaste le elegantissime ville e le immense fiere piantagioni alla “Via col Vento”, giardini curatissimi… che non hanno lasciato spazio ai grattacieli!!



 Altra cosa stupenda di queste zone è il cibo.. anche lì la tradizione e il nuovo hanno creato delle fusioni eccelse… a Savannah, dove lungo la River Street ancora i lampioni sono a gas, dove ogni strada si incrocia con belle piazzette e dove le querce sono piene di grigie ed affascinanti thillandsie ricadenti, siamo stati a cena a “The Olde Pink House”, una villa ben conservata del XVIII secolo e lì per la prima volta in vita mia ho mangiato i mitici pomodori verdi fritti…una rivelazione…. Inutile dirvi che per tutto il viaggio da Savannah a Charleston…non sono più mancati nei miei pasti insieme al fantastico iced sweet tea!!!I più buoni in assoluto sono stati quelli di “Jestine’s Kitchen” a Charleston…un ristorantino semplice dove vengono riproposti i piatti di Jestine, una signora di colore nata in una piantagione del Sud nel 1885, che nel 1928 andò a servizio presso la famiglia Ellison e dove si occupò della loro casa, della loro cucina e soprattutto della unica figlia Dana Berlin Ellison, che decise anni fa di aprire questo ristorantino riproponendo le ricette di Jestine, la quale  morì alla veneranda età di 112 anni nel 1997…ma grazie a questo posticino nel centro di Charleston Jestine  rivive sempre e tutti i giorni!!!!

POMODORI VERDI FRITTI della signora WARRINGTON    (ricetta gentilmente regalatami da Eleonora di BURRO E MIELE) e ve la riporto esattamente così come me l’ha scritta!!! GRAZIE ELEONORA


4 pomodori verdi di dimensioni medie
1 cucchiaino di sale
1/2 cucchiaino di pepe
1 cucchiaio di aneto
1 tazza (150 gr circa) di farina di mais (cornmeal) IO HO USATOFARINA FIORETTO
Olio per friggere ma tu sai che negli USA si friggono nella sugna vegetale, ma si trova qui in europa???

Mischiare la farina di mais con i condimenti, impanare le fette di pomodoro in tutti i lati e friggere fino a farli diventare dorato scuro.
C'è anche chi li fa passare prima per l'uovo sbattuto, ma sembrerebbe che questa è la versione antica e originale, che nasce come piatto povero, per recuperare i pomodori non maturi caduti nelle piantagioni.

There is a place  in the U.S.that isn’t  great national parks ,  long and endless  6-lane highways, skyscrapers  .... There is a sleepy part of the USA, without noise, it's romantic, sweet and  warm.... It is located in the south, the Atlantic Coast where large rivers flow .. where huge cargo ships still sails on,  in the XIV century these areas were rich and prosperous thanks to tobacco and cotton plantations ,  then slavery was abolished (fortunately ) and these regions of the South suffered a major collapse along with extensive damage to the Civil War. Do not believe it, but paradoxically, this defeat   was the today luck  for towns like Savannah (Georgia) and Charleston (South Carolina) and want to know why?? Because unlike all other American cities, they stopped, there was no money to rebuild .. and so remained the elegant villas and vast plantations fairs to "Gone With the Wind", manicured gardens that have left ...instead skyscrapers!
 Another wonderful thing is the food of these areas .. there is a good fusion between traditional and new ... these fusion is  excellent in Savannah, along the River Street where the streets are still lighted by gaslamps, where every street intersects with beautiful squares and where the oak trees are full of gray and fascinating falling moss, we had dinner at "The Olde Pink House", a well-preserved eighteenth-century mansion and there for the first time in my life I ate the legendary fried green tomatoes ... a revelation .... Needless to say all the way from Savannah to Charleston ... are no longer missing in my meals with the great iced sweet tea! The best green fried tomatoes were those of "Jestine's Kitchen" in Charleston ... a simply restaurant  where they are replicated Jestine dishes, a black lady born on a plantation in the South in 1885 and who in 1928 went to services at Ellisons home,  and took care of their home, their kitchen and especially the only daughter Dana Berlin Ellison, who decided years ago to open this restaurant proposing Jestine’s recipes, Jestine died at the age of 112 years in 1997 ... but thanks to this little place in downtown she lives forever and every day!!




One day I was chatting with Eleonora and talking about travel, places visited, we ended up back in the southern United States and talking about fried green tomatoes, she lives  in France and she didn’t find green tomatoes, and although I find them and also good from Pachino, I did not have a tested recipe to cook them .. and so she gave me Mrs Warrington’s recipe from  Louisiana, an original recipe, a recipe handed down, without using  eggs, like Jestine’s one! ! A big thanks to Eleonora, the recipe is fantastic and very easy ... especially because on Sunday night  hubby was prepared  them. Obviously I wrapped” my kitchen with aluminium foil because it was cleaned and..  then I didn’t want to clean up it after dinner ... . Hubby  also proceeded to prepare the steaks with bbq! We spent a beautiful Sunday evening, almost warm summer, remembering an unforgettable trip, thinking how many special people I met through my blog ... .. not to cook and not to clean!

4 medium-size green tomatoes
1 teaspoon salt
1 / 2 teaspoon pepper
1 tablespoon dill
