MUFFINS AI MIRTILLI E MUFFINS AL CIOCCOLATO -I MUFFINS DI MARY!!! Mary's muffins (TY)!!

La prima volta che sono stata nei miei amati USA è stato ben 22 anni fa, partii da sola...era il mio grande sogno che si realizzava, non scorderò mai quando scesi dal Boing 747 della TWA al JFK di New York, erano le 14.30 c'era un tiepido sole di fine ottobre....d'istinto mentre scendevo dall'aereo mi girai a sinistra e attraverso la foschia vidi spuntare fuori dalle nuvole le cime di due grattacieli gemelli..... si, quella fu la prima cosa che vidi degli Stati Uniti appena misi piede a terra!!! Di lì a pochi giorni sarei salita sulle Twin Towers...e avrei sentito da lassù in mezzo al cielo il mondo ai miei piedi..nel vero senso della parola..la cosa che mi è rimasta impressa fu che all'orizzonte avvertii la rotondità della terra, sensazione mai più provata!!! Che emozione..... !
Ero a Boston quando entrai in una Bakery e mi trovai davanti ad un bancone immenso pieno zeppo di muffins (di ogni misura e gusto) per la prima volta...ne comprai di piccoli....ai mirtilli, al cocco, integrali e alle banane.....e fu amore a prima vista!!!! Per me i classici ed insostituibili sono i blueberry muffins e la prima colazione americana appena torno da quelle parti, oltre ad un mega bicchiere di latte (io adoro il latte e trovo il latte americano squisito all'ennesima potenza)è un bellissimo, immenso blueberry muffin!!! E mentre mi gustavo uno di questi muffin parlando con un'amica il cui marito è tutt'ora professore di astronomia ad Harward che vedendo una foto di un tipo alto e biondo e dicendo "ma io questo qua lo conosco!!!"...scoprii il motivo per cui avevo superato la dogana americana in tre secondi netti( alcuni giocatori di basket (erano altissimi) tra cui il biondo, mi avevano fatto cenno di passare la dogana con loro e il loro gruppo di accompagnatori...mi rendevo conto che fosse una squadra abbastanza conosciuta..perchè mentre passavano la gente lanciava urlettini...e varie... ma io ero così emozionata di essere a New York che neanche mi resi conto che c'erano giornalisti e fotografi!!!).... Bene ragazzi...alla mia amica andò quasi di traverso il suo muffin quando capì che il biondo che mi aveva fatto passare indenne (avevo un mega pezzo di Parmigiano Reggiano in valigia!!!!!) i controlli doganali era il famosissimo Larry Bird con tutta la squadra (all'epoca all'apice del successo) dei Celtics Boston!!!! Suo marito sfegatato fan dei suddetti campioni...per un attimo pensò anche di mettermi alla porta poichè non mi ero fatta fare neanche un autografo!!!
Ancora oggi a distanza di tanti anni quando penso muffin....il mio pensiero corre a quel viaggio, a quei giorni a Boston tra i meravigliosi colori dell'autunno nel New England, alla New York di cui sono malata.


L'altro giorno visitando il blog della mia amica Mary ho studiato la ricetta dei suoi blueberry muffins, che ogni anno lei fa per la colazione del giorno del Ringraziamento e mi sono innamorata di questa ricetta dove lei usa la panna acida, che io qui non riesco a trovare , così ho sostituito con del buon yogurt intero bianco...ed il risultato è stato "amore al primo morso"... e ho decretato che questa sarà la ricetta dei miei muffin....e con un bel bicchierone di latte brindo ai Celtics Boston!!!


I MUFFINS DI MARY dalla cucina di One perfect bite






AI MIRTILLI:

1/2 cup di burro a temperatura ambiente (113 gr)
1/2 cup di zucchero (50 gr)
1 tsp (cucchiaino ) estratto di vaniglia
2 uova grandi
2 cups di farina 00 (circa 250 gr)
2 cups di yogurt intero bianco (praticamente un vasettone da 500 gr)
1 tsp baking powder ( va bene anche il lievito per dolci)
1 tsp bicarbonato di sodio
1/4 tsp sale
1 e 1/4 cups di mirtilli (io sono andata ad occhio e a gusto!!!)

* 1 tsp (cucchiaino) equivale circa a 5 ml


Preriscaldare il forno a 200°C imburrare gli stampini da muffins (io uso la teglia per muffins e dentro ci metto i pirottini di carta!).
In una ciotola mescolare bene il burro, lo zucchero e la vaniglia. Aggiungere le uova e poi lo yogurt, io ho mescolato meglio il tutto velocemente con il frullatore ad immersione.
Setacciare a parte la farina, il lievito, il sale e il bicarbonato. A questo punto mescolare velocemente , ma delicatamente il tutto con i liquidi (devono amalgamarsi bene tutti gli ingredienti, ma il tutto in brevissimo tempo). Unire i mirtilli (io ho usato quelli congelati comprati unmesetto fa freschi) e riempire gli stampini a 3/4.


CIOCCOLATO E PERE

stesse dosi di cui sopra, con la differenza che :
in 2 cups di farina 00 ci faccio stare 2 Tbs (cucchiai) di cacao amaro in polvere
e al posto dei mirtilli metto 2 pere tagliate a cubetti

Cuocere per circa 24-26 minuti, fare la prova con lo stuzzicadenti.
Trasferire i muffins su una griglia a raffreddare, spennellare con burro e una spolverata di zucchero semolato.
Con questa dose vengono 12 muffins ai mirtilli e 12 cioccolato e pere!!
Un paio li abbiamo mangiati dopo esattamente due giorni , senza particolare cura, ed erano ancora buoni e soffici come il primo giorno!!!!

22 years ago I went to my beloved USA (my greatest dream came true!!!) and I remember the first thing I saw on my left while my feet touched American soil was through clouds and mist two twins skyscrapers tops...it was the end of october...some days later I felt at the world's top , when I went to World Trade Center.... !!!
When I met my first muffins I was in Boston , with a friend of mine, whose hubby is still an astronomy professor in Harward, and I always remember my first muffin bite because I was telling my friend that I went through JFK customs in three seconds (I got in luggage a huge Parmigiano Reggiano piece for my friends!!!!) because there were a young , very tall, blond man with his basketball team who noded at me to go through customs with them....I was so happy to be in USA that I didn't care about photografers and journalists and fans!!!! so...while I was biting into my first blueberry muffin I understood that the blond and kind man was Larry Bird with the Celtics Boston.....ahahahahahah!!!
Now everytime I see a muffin I always think to that moment in Boston and to my friend's hubby face....that is a Celtics Boston Hooligan!!!! Well, when I eat a muffin I always think to USA, and New York city...I am an USA "addicted"!!
Every time I come back to USA my first breakfast is a huge glass of milk (I think in USA milk is too good!!!) with a  big and yummy blueberry muffin.... and I am reconciled with the whole world!!!

The recipe below is Mary's a very kind blog friend that I met in blogland ...and I'm really glad to have met all of you....so thanks a lot, Mary, because I really love this recipe....as I told you here it's difficult to find sour cream so I substitute it with white yogurt....I am absolutely happy about the result....THANK YOU VERY MUCH!!!! This will be my muffin recipe......!!!

1/2 cup butter, room temperature
1/2 cup sugar
1 tsp vanilla
2 large eggs
2 cups white yogurt
2 cups all porpuse flour
1 tsp baking powder
1 tsp baking soda
1/4 salt
1  1/4 cup blueberries

melted butter and sugar for topping




Directions:
1) Preheat oven to 400 degrees F. Grease and flour muffin cups or line with paper liners. Set aside.
2) In a large mixing bowl, cream together butter, sugar and vanilla. Add eggs and beat until incorporated. Blend in sour cream and set aside.
3) In a separate mixing bowl, stir together flour, baking powder, baking soda and salt; fold into creamed mixture gently (DO NOT OVER MIX).
4) Fold in Marionberries and spoon batter into muffin pans, filling them 3/4 full.
5) Bake muffins 24 to 26 minutes. Test for doneness with a toothpick. Muffins are done when toothpick comes out clean.
6) Transfer to cooling racks and while still warm, dip muffin tops in melted butter and then into granulated sugar. Yield: 16 to 20 muffins.
 








With the same recipe but adding 2 Tbs cocoa powder and two chopped pears instead berries ....I prepared chocolate and pears muffins!!!!YUMMYYYYYYYYYYYYY..

PATATE DUCHESSE -GRAZIE DEI PREMI E PATATE "DUCHESSE"- Potatoes Duchesse recipe

Oggi vi posto una ricetta veloce veloce...desidero ringraziare quegli amici bloggers che mi hanno inviato dei premi in queste ultime due settimane. Io con queste cose sono negatissima e me ne scuso, però un ringraziamento a chi mi ha pensata desidero farlo.

Ieri siamo stati a pranzo dai nostri cari amici Claudia (Claudietta) e Francesco (Ciccio), ed essendo un pranzo per stare insieme, per parlare tra noi ragazze , mentre i ragazzi stanno stesi sul divano a guardare la partita....e non essendoci formalità , ma solo una sincera amicizia,per noi equivale ad un pranzo in famiglia. Di solito noi ragazze ci mettiamo d'accordo su quello che possiamo portare per "dare una mano" e così, visto che Claudietta pensava all'antipasto, al buonissimo primo , al secondo e allo strepitoso dolcetto, a noi non restavano che i contorni, così ho preaparato i mei peperoni gratinati al forno e le patate Duchesse, la ricetta l'ho presa da una delle mie Bibbie di cucina, "Il cucchiaio d'argento", l'ho solo modificata un po' nelle dosi...ma sono davvero venute buonissime..e anche la sera, mangiate al volo a temperatura ambiente erano ancora ottime!!!

PATATE DUCHESSE (ricetta liberamente tratta da "Il cucchiaio d'argento" ed. Domus)in rosso le mie modifiche

 800 gr patate (1 kg)
150 gr burro (100)

4 tuorli
sale

Pelare, pulire e tagliare a tocchetti le patate, lessarle e passarle al passaverdura, mescolare con il burro. Lasciarle intiepidire e successivamente mescolare con i tuorli e il sale. Mescolare bene. Accendere il forno a 250° , mettere sulla placca del forno la carta forno e con la sac-a-poche e il beccuccio a stella formare i "riccioli" di patate, spennellare un po' di tuorlo. Infornare per 5-10 minuti.... e sono pronte!!!

Yesterday we were at my friend Claudia (Claudietta...that is..like "little Claudia", because she is very young and sweet) for lunch, she prepared a very good one..as for us it's like a family lunch we brought side dishes and I prepared my red pepper "au gratin" and Duchesse potatoes.
In these weeks I received a lot of prizes from some very kind blog-friends, so today I post this recipe to thank them!!!

May you have a very nice week.... in these days I'm going to decorate Xmas tree, Nativities...and home!!!! Here in Italy on the 8th december it is holiday, and on that day we start to live the Xmas Spirit....so as you know, this year we're going to spend Xmas Holiday with my parents..... on the 8th December I give an important lunch for my hubby's family...so this week it's going to be an "hard job week"!!!!



DUCHESSE POTATOES(recipe based on "The silver spoon" ed. Domus) my changes in red



800 gr potatoes      (1 kg)
150 g butter (
100 gr)
4 egg yolks
salt

Peel, clean and cut the potatoes , boil them and pass them through a sieve, mix with butter. Let to cool and then mix with egg yolks and salt. Mix very well. Preheat oven at 480°F, put on a baking pan with parchment paper, using a sac-a-poche form potatoes "curls", brush some egg yolk . Bake for 5-10 minutes.


We ate some of them even for dinner and at room temperature were still very good, so I think you can cook them even some hours before and if you want you can warm them just few minutes!!

ANGELICA delle SIMILI passo passo -UN ANGELICO CENTROTAVOLA !! a yummie centerpiece!!

Oggi è giovedì...e cosa succede su questo blog il giovedì??? Ma vi presento una nuova (st)renna di Babbo NAtale!! Ieri era toccato a Stefania e domani toccherà alla Mapie.
Ho pensato ad una (st)renna che andasse bene sia come regalo buono e gustoso, ma che avesse anche un' utilità....immagino che quasi tutti conoscano la famosa "Angelica delle Sorelle Simili" e fin qui nulla di strano...ma guardandola non si può non pensare ad una bellissima coroncina natalizia...così come spesso mi accade ho fatto 2+2. Mi ritrovo da tempo immemorabile dei portacandele di vetro che vanno inseriti nei centrotavola già pronti e io questa volta ho voluto utilizzarli da inserire nell'Angelica..e così ho pensato che oltre ad essere un bel regalo...potrebbe anche essere un bel centrotavola!!!
So che a molti non piacciono uvetta e canditi, ma molte persone che conosco hanno sostituito questi ingredienti con gocce di cioccolato e nocciole tritate..... quindi potete tranquillamente sbizzarrirvi perchè il risultato è ugualmente ottimo.
Pensate che carino... arrivare a cena da amici e parenti oltre che con il dolce anche con un centrotavola...che farà bella mostra di sè per tutta la cena o pranzo!!!!
Quindi forza...cominciate a fare una tabella dei regali da fare e non dimenticate di comprare con uvetta e arancia candita...anche le candele.... buona giornata a tutti!!!

Pasta brioche - lievitino

135 gr farina di forza

13 gr lievito di birra
75 gr acqua

Preparazione: mescolare bene tutti gli ingredienti e mettere a lievitare fino al raddoppio (circa un'ora)

Ingredienti:

400 gr farina di forza

75 gr zucchero

120 gr latte tiepido

3 tuorli

1 cucchiaino sale

120 gr burro a temperatura ambiente


 
Per ripieno:


75 gr uva sultanina

75 gr scorza di arancia candita

50 gr burro fuso



Per glassa:

1 albume

100-150 gr zucchero a velo

(se piace 1 cucchiaio di Grand Marnier)

Preparazione:

Mettere in una ciotola la farina a fontana e al centro il latte, i tuorli , lo zucchero, mescolare solo un po' di farina e aggiungere il sale.
Unire il burro ed impastare tutto per bene battendo bene fino a che non si stacca dalle pareti della ciotola.

Rovesciare sul piano di lavoro ed unire il lievitino (si stende un po' l'impasto e ci si mette al centro il lievitino), impastare e battere con forza , deve essere tutto bene amalgamato, non si devono vedere differenze di colore nell'impasto

Mettere l'impasto in una ciotola unta e fare lievitare coprendo fino al raddoppio..

Rovesciare sul piano di lavoro e senza lavorarla stenderla formando un rettangolo di 2-3 mm di spessore e ca cm 60x 40.

Pennellare abbondantemente con il burro fuso (50 gr),

 cospargere di uva sultatina (ammollata inacqua tiepida ed asciugata) e di scorza di arancia candita.

Arrotolare il lato più lungo, senza pressare troppo.

Tagliare il rotolo a metà per il lato lungo, separare delicatamante i due pezzi e formare un torcione , fecendo in modoche la parte tagliata rimanga verso l'alto.

Mettere in una teglia imburrata e chiudere a corona.

Pennellare con il burro fuso e fare lievitare fino al raddoppio coprendo con una ciotola grande.
Cuocere in forno a 200°C per 20-25 minuti.
Nel frattempo sciogliere lo zucchero a velo con l'albume fino ad ottenere una glassa liscia.
Appena l' Angelica esce dal forno pennellarla con la glassa e lasciarla asciugare.


Per centrotavola:  e un nastro a scelta.

Today is thursday...and you know what happens on thursday: Santa's reindeer Flavia is back with a new idea to give to your friends as a present.
You have to know that here in Italy there are two twin sisters , Simili Sister, they were two very good bakers,with a lot of wonderful recipes for bread and cakes, when they sold their bakery they started to give classes around Italy and last year before Christmas I was lucky to meet them during a class in Rome. They taught me to prepare PAnettone, Pandoro, pizza, little semi-sweet breads....and the wonderful ANGELICA, this is a very famous cake of the two sisters....When I was a child I often went to their bakery after school (I lived in the same city!!!!!) , so I was lucky to taste their very good recipes ....!!!
Now you can see that this cake has a wreath form, so I thought it could be a very nice table centerpiece.... are you agree with me??? It only needs two candles and some ribbon!!!!



ANGELICA by Simili Sisters


Brioche dough- "lievitino" (little yeast)


135 g bread flour

13 gr yeast cube

75 gr water


Main dough
Ingredients:


400 gr bread flour

75 gr sugar

120 gr lukewarm milk

3 egg yolks

1 teaspoon salt

120 gr butter at room temperature



For filling:

75 g soaked and then well drained raisin

75 g candied chopped orange peel

50 gr melted butter


For frosting:




1 egg white

100-150 gr powdered sugar

(If you like 1 tablespoon of Grand Marnier)




Preparation lievitino: Combine all ingredients  (Pic.A) it will be a good dough and let leaven to double(ca one hour) (Pic. B).
Ten minutes before to use "lievitino" you prepare the "main dough" .
 Put in a bowl the flour, make a center an put milk, egg yolks, sugar, mix just a little 'flour and add salt.
Combine the butter and mix all the ingredients beating well until it breaks away from the sides of the bowl.
Pour on the topcounter and add the "lievitino" (stretching a bit 'and you put the dough in the center lievitino)( Pic.C) ,mix and beat with strength (Pic.D ), should all be well balanced, you should not see color differences in the dough (Pics E-F ) .
Put the dough in a greased bowl and cover to leaven until double
.

Pour on counter forming a rectangle of about 2.3 mm thick and 60 x 40 cm. (Pics G-H )

Brush thoroughly with the melted butter (Pics L-M) and sprinkle with raisin and candied orange peel. (Pic N )

Roll the long side, without pressing too much. (Pic P )
Cut the roll in half the long side, separate the two pieces and form a simple braid, the top faces must stay on top (Pics Q-R-S).
Place in a greased (with butter) pan and form a wreath (Pic T ).
Brush with melted butter and let it leaven until doubled ( 1 hour ca), covering with a large bowl






Bake at 400 ° F for 20-25 minutes.


Meanwhile, dissolve the sugar with the egg white until a smooth glaze.

As soon as the Angelica out of the oven brush with glaze and let it dry.




For centerpiece: two candles, and ribbons...as you prefer!




 
So , friends, start to think about Christmas presents...and don't forget to bake this very yummie centerpiece.
