Luxury books)
Per le cupcakes:
125 gr burro morbido
100gr cioccolato fondente spezzettato
300 gr confettura di ciliegie
150 gr zucchero semolato
Un pizzico di sale
2 uova grandi sbattute
150 gr farina auto lievitante

In two weeks it’s going to be Easter and as a “reindeer” today I post you a chocolate recipe…well I’m going to be honest with you: this recipe it’s dangerous….when you eat it..you’re going to be addicted!!!
It’s a Nigella recipe that I found on her beautiful book “How to be a domestic Goddess”.
It’s a cupcakes chocolate and cherries recipe, but with it I prepare just 4 cupcakes and a wonderful little cake (8 inches diameter pan)…I brought it to friends those invited us for dinner and it was a great success!!!
CHOCOLATE AND CHERRIES CAKE AND CUPCAKES by Nigella Lawson (“ How to be a domestic Goddess”)
FOR THE CUPCAKES:
· 4 oz(125g )soft unsalted butter
· ¾ cup (100g) dark chocolate, broken into pieces
· 10 oz (300g) cherry jam
· 5 oz(150g) caster sugar
· a pinch of salt
· 2 large eggs, beaten
· 5 oz(150g) self-raising flour
·
· FOR THE ICING:
· 1 ¼ (200g) dark chocolate broken into pieces
· 7 oz(200ml) double cream
· natural-coloured glace cherries
Method
1. Preheat the oven to 350ºF and grease a 8 inches pan with butter.
2. Put the butter in a heavy-bottomed pan on the heat to melt. When nearly completely melted, stir in the chocolate. Leave for a moment to begin softening, then take the pan off the heat and stir with a wooden spoon until the butter and chocolate are smooth and melted. Now add the cherry jam, sugar, salt and eggs. Stir with a wooden spoon and when all is pretty well amalgamated stir in the flour.
3. Scrape and pour into the 4 muffin papers in their tin and bake for 30 minutes and pour the rest of the dough into the 8 inch pan and bake for 45 minutes. Cool in the pan on a rack for 10 minutes before turning out.
4. When the cupcakes are cool, break the chocolate for the icing into little pieces and add them to the cream in a saucepan. Bring to the boil, remove from the heat and then whisk - by hand or electrically - till thick and smooth. Ice the cupcakes, smoothing the tops with the back of a spoon, and stand a cherry in the centre of each.
5. For cake, decorate it as you prefer and with cherries
Don’t forget tomorrow to visit my friend reindeer Mapi.
Have a nice day!!Flavia
