TRADITIONAL CHRISTMAS PUDDING di Delia Smith ..e non chiamatelo Budino!!!

Sono sempre stata curiosa di assaggiare un vero, originale Christmas Pudding, come vi dicevo qualche giorno fa QUI.
Fare un pudding originale inglese ormai lo so, è semplicissimo, servono solo la pazienza di pesare bene tutti gli ingredienti e avere il tempo di mettere sul fuoco un pentolone capiente con acqua per far cuocere il nostro eroe al vapore!
Se quello di Nigel Slater mi è parso facile, oltre che divinamente buono, questo di Delia Smith è paradossalmente ancora più semplice da preparare.
Ovviamente per Stir-Up Sunday, come vi racconto QUI, ho fatto entrambe le versioni, perchè grazie alla Nostra Signora Roberta dei Pudding, ho aggiunto il terzo stampo alla mia nuova collezione di Pudding basin (si oltre al Suet, colei mi ha inviato anche un nuovo Mason Cash). Quindi il 20 Novembre ci siamo messi in tanti a mescolare gli ingredienti e nascondere la monetina porta fortuna e adesso siamo tutti in attesa di scoprire il risultato (e NON sgranate gli occhi, perchè vanno preparati con largo anticipo proprio per fare si che tutti i sapori, profumi ed ingredienti maturino al meglio, così che il giorno di Natale il vostro dolce  sia più buono che mai). E NON scandalizzatevi al pensiero di qualcosa che possa andare a male, perchè non è così, perchè sono almeno 3-4 secoli che gli inglesi lo fanno, perchè comunque prima di servirlo va praticamente ricotto e perchè quello di Slater l'ho già servito, assaggiato, mangiato, gustato e digerito.... e sono viva e vegeta con il solo pensiero che è già finito, purtroppo!
Io ho cercato di seguire la ricetta pedissequamente, sono perfino riuscita a procurarmi il suet*, grazie alla disponibilità di Roberta  che me lo ha procurato dall'Olanda, lo ha portato in Italia in auto e poi dme lo ha spedito qua in Sicilia.
Non ho trovato le "dark cherries", che sono le ciliegie candite scure, saranno tipo le amarene, non so, e quindi ho optato per le classiche ciliegie rosse e il Barley wine, che tradotto potrebbe essere vino d'orzo, ma in realtà è una birra particolare, ma essendoci nella ricetta la Stout, sono andata di Guinness a go-go.

TRADITONAL CHRISTMAS PUDDING (by Delia Smith "

per due stampi da pudding  Mason Cash da 0,900 ml (S36)

Ingredienti: per uno stampo da 1,8 litri o 2 da 0,900 litri (Mason cash S36)

165 g di suet
165g di pane bianco secco, grattugiato
1 ½  cucchiaino di all-spice (o spezie miste)
1/3 cucchiaino di noce moscata, grattugiata
1/3 cucchiaino di spezie miste (pumpkin pie spice)
½ cucchiaino di cannella
330 g di zucchero muscovado
165 g di uvetta sultanina
165g di uvetta Corinto
375 g di cranberries essiccati (mirtilli rossi secchi)
36 g di scorza di limone candita
36  g di mandorle, tritate (vanno bene anche con la buccia)
1 mela grande, a pezzettini piccoli (non serve sbucciarla)
buccia grattugiata di un’ arancia piccola
buccia grattugiata di mezzo limone
3 cucchiai di Rum scuro
200 ml di birra Guinness
3 uova grandi
75 g di farina autolievitante


In una ciotola grande mettete il suet, il pangrattato, le spezie e lo zucchero. Mescolate gli ingredienti molto bene.Unite le uvette, i cranberries, i canditi, le mandorle, la mela, la scorza d’arancia e quella di limone. Mescolate a fondo in modo che tutto sia ben distribuito e controllate di aver messo ogni ingrediente.
A parte, in una ciotola più piccola, mescolate il rum, la birra e le uova leggermente sbattute. Amalgamate bene il tutto con un cucchiaio di legno e poi versatelo sugli ingredienti preparati prima mescolando bene.
La tradizione vuole che riuniate i membri della famiglia presenti in casa e che ognuno dia una bella mescolata all’intruglio esprimendo un desiderio! (FATTO!!)
A questo punto coprite la ciotola e lasciatela riposare tutta la notte fuori dal frigo.
Unite la farina agli ingredienti della ciotola e date un’ultima mescolata. Imburrate la ciotola per il pudding e versate l’impasto dentro sistemandolo per bene.


Coprite lo stampo da pudding con un doppio strato di carta da forno e, in seguito, con un foglio di alluminio, legate bene con lo spago (qui è spiegato bene come si fa) Create infine una maniglia in modo da poter estrarre agevolmente il vostro pudding dalla pentola, una volta cotto e ancora bollente.
Mettete lo stampo sigillato in una pentola capiente da poterlo contenere. Riempite la pentola di acqua bollente fino ad arrivare ai 2/3 dello stampo, coprite con un coperchio e mettete il tutto su fuoco basso per 8 ore.
(Nel caso utilizziate due stampi da 0,900 litri, ovviamente cuocerete in due pentole distinte e i tempi di cottura vanno abbassati a 6 ore e ½ circa.)
L’acqua deve bollire appena creando una meravigliosa sauna di vapore che renderà il vostro pudding magnifico!
Ogni due ore buttate un occhio alla pentola e appena vedete che il livello dell’acqua si abbassa, aggiungetene altra bollente in modo da farla tornare ai 2/3 dello stampo.
Quando la cottura è terminata, togliete il pudding dalla pentola. Rimuovete gli strati di alluminio e carta forno e  fate intiepidire, dopo di che ricoprite i con due fogli di carta forno nuovi, uno di alluminio e legateli nuovamente con lo spago e ricreate la maniglia.
Conservatelo in un posto fresco e buio fino al giorno di Natale…..quando dovrete  rimettere lo stampo con il pudding nella pentola; riempite di acqua bollente fino ai 2/3 della ciotola e coprite con un coperchio. Mettete sul fuoco a fiamma bassa e lasciate cuocere a vapore per altre 2 ore e 15 minuti. Tenete sempre d’occhio il livello dell’acqua e caso mai rabboccate.
Al momento di servire, rimuovete lo stampo dalla pentola, togliete alluminio e carta forno e sformate il pudding su un bel piatto o alzatina. Potete decorarlo con un rametto di agrifoglio.


Per la scenografia finale su consiglio di Nostra signora Roberta dei Pudding : Scaldate un mestolo di brandy direttamente sul fuoco,  e appena è caldo, facendo tantissima attenzione, dategli fuoco.
Portate il pudding in tavola e versatevi sopra il brandy fiammeggiante. Brindate tutti assieme e appena la fiamma si spegne servite il pudding con la classica salsa al rum natalizia sempre di Delia Smith o con la crema inglese, o con Chantilly.

NON TEMETE se dovesse avanzarvene un poco, basta conservarlo in frigo e poi avvolgerlo in carta stagnola e riscaldarlo al forno..... oppure...abbiate pazienza che vi pubblico presto una bella idea di Nigella!!!

I made it TWICE,... oh yeah... on the Stir-Up Sunday I made two different Xmas Pudding recipe, one Slater's and one Delia's .... I tasted the first ne and on Christmas day I will make the comparison to choose my favourite...so stay tuned!!

TRADITIONAL CHRISTMAS PUDDING (by Delia Smith “ Delia’s Happy Christmas")

110g shredded suet
25g whole candied peel, finely chopped
25g whole almonds (skin on is OK)
1 small cooking apple cored and finely chopped (no need to peel)
grated zest ½ large navel orange
grated zest ½ large lemon
2 tablespoons rum
75ml barley wine
75ml stout
2 large eggs
50g self-raising flour, sifted
110g white breadcrumbs
1 level teaspoon ground mixed spice
¼ level teaspoon freshly grated nutmeg
good pinch ground cinnamon
225g soft dark brown sugar
110g sultanas
110g raisins
275g currants

You will also need a 2 pint (1.2 litre) pudding basin, lightly greased, baking parchment, foil and string, and a traditional or fan-type steamer.

Begin the day before you want to steam the pudding.
Take your largest, roomiest mixing bowl and start by putting in the suet and breadcrumbs, spices and sugar. Mix these ingredients very thoroughly together, then gradually mix in all the dried fruit, peel and nuts followed by the apple and the grated orange and lemon zests. Don’t forget to tick everything off as you go to make sure nothing gets left out.
Next in a smaller basin, measure out the rum, barley wine and stout, then add the eggs and beat these thoroughly together. Next pour this over all the other ingredients and begin to mix very thoroughly. It’s now traditional to gather all the family round, especially the children, and invite everyone to have a really good stir and make a wish!
The mixture should have a fairly sloppy consistency – that is, it should fall instantly from the spoon when this is tapped on the side of the bowl. If you think it needs a bit more liquid add a spot more stout.
Cover the bowl and leave overnight.
 Next day stir in the sifted flour quite thoroughly, then pack the mixture into the lightly greased basin, cover it with a double layer of baking parchment and a she t of foil and tie it securely with string (you really need to borrow someone’s finger for this!). It’s also a good idea to tie a piece of string across the top to make a handle (watch here). Place the pudding in a steamer set over a saucepan filled with simmering water and steam the pudding for 8 hours.
Do make sure you keep a regular eye on the water underneath and top it up with boiling water straight from the kettle about halfway through the time. When the pudding is steamed, let it get quite cold, then remove the baking parchment and foil and replace them with some fresh ones, again making a string handle for easy manoeuvring.
Now your Christmas pudding is ready for Christmas Day. Keep it in a cool place away from the light. Under the bed in an unheated bedroom is an ideal place.

On Christmas Day:
Fill a saucepan quite full with boiling water, put it on the heat and, when it comes back to the boil, place a steamer on top of the pan and turn it down to a gentle simmer.  Put the Christmas Pudding in the steamer cover and leave to steam for 2 hrs 15 mins.  You'll need to check the water from time to time and maybe top it up a bit. When you are ready to serve the pudding, remove from the steamer and take off the wrapping. Slide a palette knife all around the pudding and turn it out on to a warmed plate.  Place a suitably sized sprig of holly on top. Now warm a ladleful of brandy over direct heat and, as soon as the brandy is hot, turn out the flame and ask someone to set light to the brandy using a long match.
Place the ladle, now gently flaming, on top of the pudding - but don't pour it over until you reach the table (if you don't have a gas hob, warm the brandy in a small saucepan).  When you do, pour it slowly over the pudding, sides and all and watch it flame to the cheers of the assembled company!  When both flames and cheers have died down, serve the pudding with Christmas Rum Sauce, or Chantilly cream.
If you have any left over, it will reheat beautifully, wrapped in foil, in the oven next day.
If you want two smaller puddings, use two 570ml basins, but give them the same steaming time.
If you want to make individual Christmas puddings for gifts, this quantity makes eight 175ml pudding basins. Steam for 3 hours, then resteam for 1 hour before serving. They look pretty wrapped in baking parchment and muslin and tied with attractive bows and tags.

Vi avevo proposto un dolce… e quindi ne approfitto anche per comunicarvi che con il gruppo delle “amiche di torte” abbiamo aperto un bellissimo gruppo su Facebook, dove già molti di voi si sono iscritti, e dove parliamo di dolci, torte decorate, biscotti, ciambelle, crostate, muffins, budini….dolci…dolci di ogni tipo, piano piano stiamo inserendo tutorials, molti di voi stanno arricchendo i ricettari con le proprie ricette..foto  e ci si scambiano consigli, trucchetti e se qualcuno chiede cerchiamo tutti insieme di dare una mano.

La ricetta di oggi è di Laurel Evans ed è davvero un’ottima idea dalla colazione, passado dall’ora del tea ad un dopo cena…. .
La base la si può anche congelare prima, quindi una volta fatta quella, preparare la ricetta sarà una passeggiata.

LEMON CHESS PIE di Laurel Evans
Pie al limone

5 uova
360 gr zucchero
6 cucchiai di succo di limone fresco (circa 2 limoni)
2 cucchiai di scorza grattugiata di limone
2 cucchiai di farina di mais (fioretto)
¼ cucchiaino di sale
60 ml di latte
60 gr burro fuso

 Pasta brisèe friabile (classic Pie Crust)

(tutti gli ingredienti devono essere freddi, per evitare che la pasta diventi dura. Mettete la farina in frigorifero per almneo 30 minuti. I pezzetti di burro andrebbero riposti in freezer per 10 minuti prima dell’uso).

320 gr farina 0
1 cucchiaino sale
1 cucchiaino zucchero
¼ cucchiaino lievito per dolci
220 gr burro, freddo e tagliato a pezzetti  1 cm
5-7 cucchiai d’acqua gelata (meno è meglio)
1 cucchiaio di aceto (bianco)

In un robot da cucina con le lame in metallo (io uso il Bimby), lavorate insieme brevemente la farina, il lievito e il sale. Unite il burro e azionate rapidamente il robot fino ad ottenere un impasto di briciole grandi quanto piselli. Versate questo composto in una ciotola capiente ed unite l’aceto e la minor quantità possibile d’acqua ghiacciata e mescolate bene con una forchetta.
Il composto dovrà essere friabile ma rimanere attaccato se si pizzica tra le dita. Se necessario, unite ancora un po’ d’acqua.
Trasferite su un piano di lavoro e impastate rapidamente finchè il composto sta insieme.
Dividetelo a metà e formate due palle di impasto , avvolgetele nella pellicola e appiatti tele a disco. Mettete in frigo per almeno un’ora (meglio per una notte) prima di stendere la pasta. Oppurecongelatela.
(ognuno dei due dischi serve per una teglia tra i 23-25 cm di diamentro)

Stendete la pasta brisèe friabile ( Classic pie Crust)in un disco di 30 cm di diametro, con uno spessore di circa 3 mm. Trasferite in una tortiera di 22 cm, lasciando un bordo di circa 1 cm oltre il bordo della tortiera. , e mettete in frigo per 40 minuti o 10 minuti in freezer.
Preriscaldate il forno a 190°.
Con una frusta a mano (non deve montare), sbattete bene le uova in una ciotola grande. Unite lo zucchero, il succo e la scorza grattugiata di limone, la farina di mais , il sale e mescolate. Aggiungete il latte e continuate a mescolare con la frusta mentre unite anche il burro.
Versate l’impasto dentro al guscio freddo di brisèe e cuocete direttamente sulla base del forno per 45 minuti. Lasciate raffreddare almeno 3 ore prima di servire . Conservate in frigo e spolverate con zucchero a velo.

Today's recipe is by Laurel Evans and it  is a great idea from breakfast  to an after dinner .... .
The base can also be frozen first, then once that done, prepare the recipe will be easy as a walk.

LEMON CHESS PIE Laurel Evans


5 eggs
1 ¾ cup sugar
6 Tbsp fresh lemon juice (about 2 lemons)
2 Tbsp grated lemon zest
2 Tbsp cornmeal 
¼ tsp salt
4 Tbsp of milk
½ stick melted butter

  1 Classic Pie Crust
(All the ingredients must be cold, to avoid that the dough becomes hard. Put the flour in the refrigerator for 30 minutes. The bits of butter should be stowed in the freezer for 10 minutes before use).
2 ¾ cup all purpose flour
1 tsp salt
1 tsp sugar
¼ tsp baking powder
2 sticks butter, cold and cut into little pieces
5-7 Tbsp of cold water (less is better)
1 Tbsp vinegar (white)

In a food processor with metal blade (I use the Thermomix), worked briefly together the flour, baking powder and salt. Combine the butter and work quickly to obtain a mixture of crumbs the size of peas. Pour this mixture into a large bowl and together the vinegar and the least amount of ice water and stir well with a fork.
The mixture should be crumbly but stick if you pinch between the fingers. If necessary, add a little 'of water.
Transferred on a work surface and knead quickly until the mixture is together.
Divide in half and form two balls of dough, wrap in plastic wrap and cloth flattened disc. Refrigerate for at least an hour (preferably overnight) . You can also put it in the freezer.
(Each of the two disks is used for a pan between 9-10 inches ​​ diameter)

Roll out the dough in a disc of 12 inches in diameter, with a thickness of about 3 mm. Transfer to a baking pan of 8 inches. And refrigerate for 40 minutes or 10 minutes in the freezer.
Preheat the oven to 370° F.
Beat the eggs well in a large bowl. Add the sugar, the juice and grated rind of lemon, corn flour, salt and stir. Add milk and continue stirring with a whisk while together the butter.
Pour the dough inside to the shell of cold brisèe and cook directly on the basis of the oven for 45 minutes. Let cool at least 3 hours before serving. Store in refrigerator and sprinkle with icing sugar.
