Yesterday we went to have lunch with friends in the countryside and there were so many lemon trees , so full of fruti that I “stole” some wonderful fragarant green lemons to prepare my Lemoncello (homemade lemon liqueur…so I have work to do now and the following recipe must be “fast” J .
Have a nice week and Happy Martin Luther King Day to all of you in USA, xoxoxoxoxo

OCTOPUS with Balsamic vinegar

pol2

1 octopus ( 2 lb)
Parsley finely chopped
1/2 cup of balsamic vinegar

1 teaspoon of sugar

black pepper

Cookthe octopus in a pan covered with a lid, without adding anything, for about 20-25 minutes, or until inserting a fork and you feel it is cooked.
In the meantime reduce the balsamic vinegar in a saucepan adding  the sugar and vinegar and bring to a boil for about 10 until they thicken.
Cool the octopus and cut it into cubes and pour into a pan with the balsamic vinegar, a pinch of black pepper and cook for  about 5 minutes, stirring and serve hot with a sprinkling of finely chopped parsley.

Servite affettato.

TORTA ZUPPA INGLESE- ZUPPA INGLESE Triffle CAKE

                                                   Scroll down for English version

Today is my dad’s birthday, and as often unfortunately happens I can’t be with him , because my parents live so far from here. So I decided to dedicate this cake to him .

My father is the person who gave me the kitchen “imorinting”, when he is  at home it’s impossible to see him without his wonderful huge aprons. He taught me to love cooking.

My father’s best recipes are fish dishes and rostaed meat, but he is a great chef, in my opinion he is the best one!!!

HAPPY BIRTHDAY DAD, I love you so much

ZUPPA INGLESE –Triffle CAKE by cuocicucidici

1 sponge cake of 4 eggs (in a 6 inches pan)
2 cups of cream
1 cup  of chocolate cream
Alkermes liquor
3 cups of whipped cream
2 drops of yellow food coloring for whipped cream (I used  "yellow gold" by Wilton)
Chocolate morsels to decorate

For the sponge cake is better if  you can use a pan with the ring, or use a ring for cakes. Inside the ring put a strip of acetate, or if you don’t have it wrap the pan (inside) with cling.
Take the cream and draw out a third and this part while it is still hot mix in ½ cup of dark chocolate, previously melted in a double boiler.
Cut the sponge cake into 3 discs.

Insert the first disc of sponge cake in the pan and “wet” with Alkermes. Pour half of the cream, cover with the second disc of sponge cake, wet with Alkermes, take a first layer with the chocolate cream, pour over this the other half of the cream and cover with the third disc of sponge cake, wet again with liquor and store in the fridge for an hour
Scrape a portion of whipped cream on the cake and then decorate it as you prefer and  with some chocolate morsels.

Serve and enjoy!
