UNA ROSA PER DIRVI GRAZIE!!! A ROSE TO THANK YOU ALL!!!

Desidero ringraziare tutti per il grande successo di HART-to-HART ...grazie per aver contribuito all'enorme e soprattutto inaspettato successo di questa mia iniazitiva.....329 ricette!!!!
Quando ho lanciato il contest poco più di un mese fa sarei stata stra stra stra contenta di arrivare a 70 ricette.... ma mai avrei pensato ad una riuscita così!!!

Ora però è giusto che vi avvisi di un paio di cose: visto il numero "spropositato" di ricette arrivate, ho dato ai giudici (Alessandro, Stefania, Stefania, Genny, Fabio, Patrizia)dieci giorni per poter decidere, così mi diranno le loro preferenze entro il 27 febbraio. Quindi spero entro il 28 di decretare ufficialmente i vincitori del mio primo contest!!



Altra cosa che desidero dirvi è che prometto di farvi avere i Pdf (si avete letto bene ...plurale: sono troppe ricette e così le suddividerò per categoria) entro la fine di Aprile..così con tutti questi bei cuori con cui per un mese abbiamo inondato la blogosfera saranno a vostra disposizione per la festa della mamma!!!Visto???? I cuori serviranno ancora prima del prossimo San Valentino.

Negli stessi giorni in cui io lanciavo HART-to-HART altre due amiche (Mamma Papera e Zuccherando ) proponevano il loro contest sulla festa degli innamorati...ma al contrario della mia raccolta...qui NON ci dovevavo essere cuori...quindi fare una ricetta romantica , che richiamasse alla festa degli innamorati...MA rigorosamente SENZA CUORI, da postare entro il 28 febbraio!!!! E quindi?? Per me San Valentino è anche rose...orchidee..orsetti di pelouche, cioccolatini....e così ho deciso di regalare a tutti voi (purtroppo virtualmente...ma io stasera me la magno davvero e anche una partecipante ad HART-to-HART che mi ha invitata a cena) una bella e buona rosa!!!

ROSA DI PANNA FRAGOLE E MERINGA

per il disco di meringa:

ricetta delle Pavlove di Nigella Lawson (ho solo cambiato i tempi di cottura..perchè con i suoi...ho mandato al cassonetto ben 8 albumi!!!!)tratta dal suo libro "delizie divine" ed. Luxuri books: (ho dimezzato le dosi che trovate sul libro):

4 albumi grandi
un pizzico di sale
250 gr zucchero semolato
2 cucchiaini di maizena (io ho usato amido di grano... Marina non può mangiare mais)
1 cucchiaino scarzo di essenza di vaniglia
1 cucchiaino di aceto di vino bianco

Riscaldate il forno a 70°C , montate a neve morbida gli albumi con il sale; unite gradualmente lo zucchero a cucchiaiate continuando a montare. Fate cadere a pioggia la maizena, alcune gocce di vaniglia e l'aceto e incorporate tutto.
Disegnate un cerchio di 22 cm di diametro su carta forno e versate il composto della meringa...ve ne avanzerà un po' , e con un cucchiaio potete fare delle meringhe che userete al bisogno..o per fare delle mini Pavlove. Infornate a 70°C per 2 ore e 1/2 , poi spegnete il forno e lasciatele così nel forno chiuso a reffreddare (io le lascio tutta la notte).

Per la panna e le fragole:

500 gr panna montata fresca
500 gr panna vegetale zuccherata montata
2 cestini di fragole
2-3 cucchiai di zucchero
2 cucchiaini di colla di pesce in polvere (ma va bene anche in fogli)

Mescolate la panna fresca con metà della panna vegetale e un cucchiaino di colla di pesce (che avrete precedentemente sciolto in un paio di cucchiai di panna fresca non montata e calda. Imburrate uno stampo di silicone a forma di rosa e versate la panna. Mettete in freezer.
Nel frattempo frullate le fragole con lo zucchero , sciogliete in due cucchiai di purè di fragole caldo il cucchiaino di colla di pesce rimasto, mescolatelo con il resto delle fragole ed aggiungete la metà di panna vegetale rimasta. Versate il composto sopra alla panna bianca nello stampo di silicone a forma di rosa.
 Coprite con pellicola o carta stagnola e rimettete in freezer per almeno due tre ore (io ho lasciato lì tutta la notte). Prendete il disco di meringa (che potete fare anche 3-4 giorni prima) stendete un filo di panna fresca non montata (così da fare da "collante")e appoggiatevi sopra la panna gelata. Al centro decorate con una rosa di pasta di zucchero (io questa volta ho usato quella già pronta rossa della Decora, che ho lucidato con un pennellino imbevuto in acqua e miele liquido). Ho poi colorato un cucchiaio di zucchero a velo con un pizzico di colorante alimentare rosso in polvere e una lieve spruzzata di acqua , ho mescolato e poi con un colino e ho decorato il dolce.

Hi everybody, today I want to thank all the fabulous friends that joined to my HART-to-HART contest...I really didn't think to get a success like this: 329 heart recipes arrived to me!!!
I'm going to tell the winners at the end of February because I let 10 days more to the Jury , because there are too many recipes to read and choose. And I'm going to promise to you that by the end of April I'm going to link to you all the Pdf , so yuo could use all these heart recipes for Mom's day!!!
To thank all of you I give you a Rose cake recipe and with this I join to another Valentine's contest , that ends on 28th Feb...the rule of this contest is : something that reminds VAlentine's BUT NOT HEARTS!! For me Valentine's is not only hearts, but also roses, chocolate, Teddy bears...orchids..... so this rose is for you:


CREAM, STRAWBERRY and MERINGUE ROSE

for the disk of meringue:

This is Nigella Lawson's Pavlova recipe (I only change the cooking ) from hes book "How to be a domestic Goddess" (I halved the doses found in the book):

4 large egg whites
a pinch of salt
250 gr caster sugar (1 cup)
2 teaspoons cornstarch
1 tsp vanilla essence
1 teaspoon white wine vinegar

Preheat the oven to 150°F, soft whip the egg whites with salt, gradually add the sugar continuing to whip. Add cornstarch using a sift, a few drops of vanilla and vinegar and stir everything.
Draw a circle 22 cm in diameter on parchment paper and pour the mixture into the meringue ... with leftover with a spoonful you can do little dicks of meringue that you will use to do some mini Pavlova. Bake at 150°F for 2 hours and 1 / 2, then turn off the oven and leave it closed to cool in the oven (I'll leave overnight).

For the whipped cream and strawberries:

500 gr fresh whipped cream
500 gr vegetable cream sweetened mounted
2 little baskets of strawberries
2-3 tablespoons sugar
2 teaspoons gelatin powder

Mix the cream with half the cream and a teaspoon of vegetable gelatin (which you have previously dissolved in a couple of tablespoons of fresh cream). Butter a silicon mold shaped like a rose and pour the cream. Put in freezer.
Meanwhile, blend the strawberries and sugar, melt two tablespoons of warm mashed strawberries the remaining teaspoon of gelatine, mix it with the rest of the strawberries and add half the remaining vegetable cream. Pour the mixture over whitecream in silicon mold shaped like a rose. Cover and put in freezer for at least two to three hours (I left it there overnight). Take the meringue disk (you can do even 3-4 days before) roll out a line of fresh not whipped cream (so as to act as "glue") and lean over the frozen cream. Put at the center a fondant sugarpaste rose, which I rubbed with a brush dipped in water and liquid honey) and then I sprinkled with pink colored icing sugar.

LA CUPOLA..E' SERVITA.... !!THE DOME IS ON THE TABLE!!!

Cosa c'è sotto alla cupola??? Oggi è giovedì...e vi tocca lo "scherzetto" delle (St)renne di Carnevale...e se niente è come sembra sappiate che...la ricetta di oggi è l'unica che non vi aveva detto della mia festa di compleanno: una bella cupola di pasta sfoglia ...con all'interno...tanta buona pasta con ragù e tuma fresca!!! Buon appetito



CUPOLA DI PASTA AL FORNO TUMA E RAGU'

1 pasta sfoglia
1kg pasta mezze maniche
400 gr di tuma fresca (o un formaggio fresco tipo una caciotta)
150 gr Parmigiano Reggiano grattugiato

ragù: 2 bottiglie di passata di pomodoro Mutti
       500 gr carne macinata di vitello
       300 gr salsiccia ( o macinato di maiale più magro che grasso)
       1 cipolla media a tocchetti piccoli
       2 gambi di sedano a tocchetti piccoli
       2 carote a tocchetti piccoli
       1 cucchiaio di burro
       2 cucchiai olio EVO
       sale e pepe
       1 pizzico di noce moscata

Preparare il ragù, mettendo a soffriggere nell'olio e nel burro le carote, la cipolla e il sedano, dopo circa 10 minuti aggiungere le carni e faarle rosolare 5-10 minuti con sal e pepe. Aggiungere la salsa di pomodoro e mescolare bene. Far cuocere per circa due ore, aggiustare di sale e pepe.
Cuocere la pasta al dente e nel frattempo rivestire l'interno di una ciotola a forma di zuccotto grande con pellicola trasparente. Tagliare la tuma o il formaggio a tocchetti, scolare la pasta e condirla con tutto il ragù, il Parmigiano e la tuma. Versare tutta la pasta nella ciotola e pressare bene, coprire con altra pellicola trasparente e mettere da parte a raffreddare qualche ora. La si può preparare anche il giorno prima e conservare in frigorifero.
Togliere dal frigo, sformare la pasta su un piatto da forno , levare la pellicola trasparente e coprire con la sfoglia pressando bene e decorando a vostro piacere..infornare a 200°C per circa mezz'ora, o fino a quando la cupola di pasta sfoglia sarà ben dorata... servire tiepida!!!

BAKED PASTA UNDER A DOME!!

1 puff pastry 
1kg pasta mezze maniche (maccheroni are good too)
400 gr fresh tuma (you can use a fresh Cheddar)
150 g grated Parmigiano Reggiano

sauce: 2 bottles of tomato sauce
500 gr minced veal
300 gr sausage (or ground pork leaner than fat)
1 medium onion diced small
2 stalks celery, diced small
2 carrots, diced small
1 tablespoon butter
2 tablespoons oil EVO
salt and pepper
1 pinch nutmeg

Prepare the sauce,put in oil and butter the carrots, onion and celery, after about 10 minutes add the meat and cook 5-10 minutes with sal and pepper. Add the tomato sauce and mix well. Cook for about two hours, adjust salt and pepper.

Cook pasta "al dente" and in the meantime, coat the inside of a great bowl-shaped with plastic wrap. Cut the cheese into chunks, drain the pasta(two minutes before the time cooking) and season with all the meat sauce, Parmesan and Tuma. Put all the dough in the bowl and press down well, cover with more plastic wrap and set aside to cool a few hours. This can also be prepared the day before and refrigerate.
Remove from refrigerator, unmold the dough on a baking dish, remove plastic wrap and cover well and pressing the puff pastry .. bake at 400 ° F for about half an hour, or until the dome of puff pastry is golden. .. serve warm!
