La prima volta che ho sentito questo nome è stato al Museo di Antropologia di Città del Messico, mentre ammiravo i reperti Atzechi, pensavo che non sarei mai riuscita a pronunciarlo e quindi con la guida Martìn era quasi diventato un gioco farcelo ripetere. Incredibile, ma alla fine del viaggio non solo l’ho imparato, ma mi piace pronunciarlo ad alta voce, mi piace il suono…. Ah per la cronaca Ce acatl Topiltzin Quetzal coatl è una divinità Atzeca, esattamente il serpente piumato.
Quando Martìn mi ha dato il suo indirizzo mail per scherzo mi ha scritto che il suo pseudonimo era Ce acatl Topiltzin Quetzal coatl e così visto che la ricetta che segue me l’ha data lui…….ho desiderato dare al suo Guacamole questo nome.
Una delle cose che non sono mai mancate sulle tavole Messicane è stato il Guacamole, e la cosa positiva è che non mangiando assolutamente peperoncino ho scoperto che nelle cucine Messicane lo preparano al momento e quindi l’ho potuto mangiare spesso anche io , perché me lo servivano senza il peperoncino e devo dire che è buonissimo.
La nostra guida Martìn Alvarado mi ha dato la ricetta che solitamente preparano nella sua famiglia e così l’altra sera ho provato a fare il mio primo Guacamole, ovviamente la cosa fondamentale è avere gli avogados alla giusta maturazione, devono essere morbidi al tatto quando li acquistiamo e l’altro giorno ho avuto la fortuna di trovarli perfettamente maturi dal mio fruttivendolo di fiducia. MA , e ribadisco MA, se li trovate non maturi, Martìn mi ha dato un consiglio per avere gli avogados alla giusta maturazione per un ottimo Guacamole, metterli in carta di giornale qualche giorno e aspettare che diventino morbidi.
IL GUACAMOLE DI CE ACATL TOPILTZIN QUETZAL COATL
2 avogados maturi
1 piccolo spicchio di aglio
¼ di cipolla piccola
1 cucchiaino di olio EVO
4-5 gocce di lime
Sale
1 pomodoro medio tagliato a cubettini
E peperoncino (facoltativo…io non l’ho messo!!!)
Sbucciate gli avogados e tagliatele a tocchi e mettete tutti gli ingredienti , tranne il pomodoro ,in un boccale e frullate con um mixer ad immersione. Aggiustate di sale, versate i cubetti di pomodoro e servite , solitamente con dei NAchos o anche con carne arrostita, o tortillas …avrete un piatto delizioso.

Acatl Topiltzin Quetzal coatl is an Aztec deity, exactly feathered serpent.
When Martin gave me his email address he wrote as a joke that his nickname was Ce Acatl Topiltzin Quetzal coatl and so as he gave to me the following recipe..I decided to named the recipe like that ....
One of the things that have never been lacking on the tables was the Mexican Guacamole, and the good thing is that as I don’t eat any chili I found that in Mexican kitchens they prepare it at the moment and then I could always eat it , for me served without the red chili pepper and I must say that it is very delicious.
Our guide Martín Alvarado gave me the recipe which is usually prepared in his family, and so the other night I tried to do my first Guacamole, obviously the main thing is to have perfectly ripe avocados, they should be soft to the touch and the other day I was lucky enough to find perfectly ripe fruit from my dealer. BUT, and I repeat BUT, if they are not mature, Martin gave me some advice to get the avocado in the guacamole for an excellent ripeness, place them in newspaper and waiting a few days they become soft.

Peel the avocados and cut them, put all the ingredients , except tomatoes, in a bowl and blend with a mixer. Season with salt, pour in the diced tomatoes and serve, usually with nachos, or roasted meat or tortillas....you’ll get a delicious dish.
